I just received a roaster traditional clay and want to cook a small turkey (stuffed). Does anyone know the correct temperature and time allocation per pound? What should I consider using a pan covered with clay?
I suggest soaking clay roaster in water for 30 minutes before starting then roast at about 350 for about 25 minutes per pound test with a meat thermometer. I used to roast chicken and others but not Turkey, but the principle is the same. The clay holds the moisture and tends to cook faster in own juices and makes for a tastier meat.
