I want to make the spongy bread served as an edible plate in Ethiopian restaurants. The problem is that all recipes that I can find online require Teff, and the Ethiopian grain that I can not find in the region. Someone know a good recipe Injera which does not require Teff?
This recipe replaces the teff flour with millet, easy to find in a health food store health or co-op. INGREDIENTS 1 tablespoon active dry yeast 5 cups warm water (110 ° f/45 degrees C) 1 teaspoon honey 3 cups of millet flour, finely ground 1 / 4 tsp tea baking soda DIRECTIONS Dissolve yeast in 1 / 4 cup water mil.
